From the roastery

We have bought this lot for three seasons. The cherries are picked ripe, pulped the same day, fermented for about 36 hours and dried on raised beds for two weeks.

It is a light roast, so it needs a fine-ish grind and water just off the boil. We brew it at 1:16 (15 g of coffee to 240 g of water) in a cone dripper. As espresso it is sharp; we sell it for filter.
